To clear the displayed text from the Conference Room window, select CLEAR HISTORY from the ADMIN TOOLS menu. Select YES when prompted to Clear Chat History?

Moderators generally clear history at the start of each Real Time Session.

Clearing history only clears the text displayed in the Conference Room, it doesn't have any affect upon the text saved to the server used to create a session transcript.
